One-Pot Mediterranean Lentil Stew
Ingredients (Serves 2–3)
* 1 cup dry green or brown lentils, rinsed
* 1 tbsp extra virgin olive oil
* ½ onion, diced
* 2 garlic cloves, minced
* 1 medium carrot, diced
* ½ red bell pepper, diced
* ½ tsp ground cumin
* ½ tsp smoked paprika (optional, for depth)
* ½ tsp dried oregano
* 3 cups vegetable broth (or water)
* 1 cup baby spinach or chopped kale
* Salt & black pepper to taste
* Fresh lemon juice, for serving
* Optional: fresh parsley for garnish
Instructions
1️⃣ Sauté aromatics: In a medium pot, heat olive oil over medium heat. Add onion and garlic, and cook for 2–3 minutes until fragrant.
2️⃣ Add veggies & spices: Stir in carrot, bell pepper, cumin, paprika, and oregano. Cook for another 2 minutes.
3️⃣ Simmer: Add lentils and broth. Bring to a boil, then reduce heat and let simmer uncovered for 20–25 minutes until lentils are tender and stew thickens. Stir occasionally.
4️⃣ Finish: Stir in spinach or kale until wilted. Season with salt, pepper, and a squeeze of fresh lemon juice for brightness.
5️⃣ Serve: Ladle into bowls, sprinkle with fresh parsley if desired, and enjoy warm with crusty whole grain bread.
